How can you turn back an employment offer or interview invitation that took a while to be finalised? And why do some offers/interview invitation take long?

You can express your appreciation for the company or the interview process. Try and leave the door open for future opportunities.
There can be several reasons why an offer or interview might take long:
Lengthy Hiring Process: Some companies, especially larger ones, have a multi-stage interview process with multiple decision-makers involved. This can take time to coordinate.
Managerial Changes: If there's a change in management during the hiring process, it can lead to delays as the new manager may want to re-evaluate candidates or restart the search.
Budgetary Approvals: Sometimes, securing final approval for a new hire depends on budget decisions, which can take time.
Internal Candidate Considerations: If there are strong internal candidates, the company might prioritize them first, delaying decisions on external applicants.
Remember, it's always better to get a clear answer, even if it means waiting a while. If you haven't heard back after a reasonable timeframe say 2 weeks after an interview, a polite follow-up email is appropriate.
